Doubles is the best street food, out of sweet Trinidad & Tobago. It comprises of two bara (fried flat breads) sandwiching curried channa (chickpeas) with cucumber chutney, coconut chutney, tamarind sauce and pepper sauce accompaniments.

It’s easy to eat, affordable, versatile and available everywhere in our twin isles. It’s also vegan! But don’t hold that against the doubles. It’s loved by all. It’s the snack we Trinbagonians and other fans from around the world crave after a long night partying, as a hangover cure, a breakfast on the go or your Sunday morning treat after church.

Buss up shut is the Trinbagonian version of a paratha - a layered, light, flaky, and buttery flatbread which is beaten into pieces perfect for scooping up the many curry options, from channa and aloo to the delectable mouth watering goodness of curried goat.

These delicate meringue-based cookies, are made from almond flour and egg whites. The macaron consists of two light, airy meringue shells that are typically smooth and slightly crisp on the outside, with a soft, chewy interior; sandwiching a delectable filling. The fillings vary from the traditional - buttercreams, ganaches, jams, curds and caramels to bespoke flavours that reflect the essence of my Trinbagonian and Caribbean heritage.

Cooking for me is all about fun and flavour!

I’m passionate about recreating the vibrant tastes of my childhood and honouring the culinary traditions of Trinidad & Tobago. Sharing these rich tapestries of flavours brings me joy and fuels my culinary and creative journey.

My fascination with the science of baking drives me to explore how simple ingredients can combine to create delightful desserts, breads, and confections. This passion led me to take a leap of faith, dedicating myself fully to earning a Merit Diploma in Patisserie and Confectionery from the Westminster Kingsway College, Hospitality & Culinary Arts department. This achievement wasn’t just an educational milestone; it was a commitment to honouring what I love, transforming my passion into purpose, and creating the best food I can.
